Using hydroponics to grow their vegetables, Butter Valley Harvest, located on the Ehst Homestead Farm which started farming in 1859, grows lettuce in water-based channels and herbs pampered in climate-controlled greenhouses year round, and tomatoes and cucumbers in a bucket system from March through December. Beginning in 2008 with their first experimental seeds, they now supply a number of local restaurants and grocery stores with fresh produce, with the intent of getting the highest quality vegetables into the hands of customers as quickly as possible. Many local chefs count on this regenerative agriculture to get the best organically grown produce, using the best cutting-edge farm practices when creating their menus.
